ALOO GOBI

1 cauliflower
1 lb (3 medium) potatoes
3 medium tomatoes
2 green chilies
1/2 inch piece of ginger
1 tsp cumin seeds
1/2 tsp black mustard seeds
1/2 tsp tumeric
2 tsp ground coriander
1/2 tsp garam masala
1 tsp brown sugar
1 tsp salt

Heat oil or ghee over medium heat, add chilies, ginger, cumin and mustard seeds until the mustard seeds sputter. Add the potatoes and cauliflower, stir for 5 minutes. Add the tomatoes, tumeric, coriander, garam masala, sugar, and salt. Stir well, cover, and simmer until tender. Add water as needed to keep things from sticking and to give a little sauce. Note: underripe tomatoes are fine for this recipe.
