BISCOTTI

3 cups flour
3 eggs
1 stick (1/4 lb) butter
1 cup sugar
1 tsp salt
1-2 cups roasted almonds
2 tsp baking powder
1 tsp vanilla extract

Cream the butter with the sugar and eggs, and add the vanilla.  Meanwhile, combine the flour, salt, and baking powder.  Slowly mix in the dry ingredients to the liquid and mix.  Add the almonds, and combine until mixed.  Roll into a log, cut into three pieces, and flatten.  Bake for 15-20 minutes at 400 until lightly browned.  Let cool, cut into cookie sized pieces, and bake 15 minutes at 300.

Options: include zest of lemon or orange and other extracts, such as anise.
