CHEESE SOUFLEÉ

5 extra large eggs
2 1/3 cups Gruyère
2 tbls chopped chives

6 tbls butter
6 tbls flour
2 cups cold milk
1/2 tsp salt
1/2 tsp pepper

Make a Beschamel sauce with the butter, flour, milk.  Cook and add spices.  Meanwhile beat the eggs and add the cheese and chives.  Mix into the Beschamel.  Pour into a 13 x 9 baking pan and bake at 400 degrees for 35 to 45 minutes, until nicely browned.  Serve immediately.

Should feed four generously.
