CHICKEN CACCIATORI

2 stalks celery
1 carrot
1 large onion
1 bell pepper
several cloves garlic

28 oz. canned whole tomatoes
6 oz. can tomato sauce
9 oz. red wine
3 tbs. mixed herbs

6 to 7 sausages
2 lbs. chicken
white mushrooms

Sauté vegetables in oilive oil.  When translucent, add tomatoes, wine, and herbs. Cook 1/2 hour.  Cube sausage and fry.  Add to sauce.  Flour cut pieces of chicken in thin layer of oil. When cooked add to sauce.  Chop musrooms, add at end.  Cook 15 more minutes.  Serve with polenta.
