COD WITH BREADCRUMBS IN A RED PEPPER COULISCook cod (3/4 inch thick) at 425 degrees for 6-8 minutes. To make the breadcrumbs, take 2 slices of bread and process in the food processor until pieces are very small. Sauté in butter until brown. Place the coulis on the plate, place the cod in the coulis, and top with the breadcrumbs. Red Pepper Couliscut red pepper into quarters, cook in boiling water (not quite covered) for about 6 minutes. Pureé through a food mill. Place in a cup, add a teaspoon of butter, and emulsify with a hand mixer.
