EGGPLANT WITH WALNUTS

2 small eggplants
1/4 cup ground walnuts
2 cloves garlic
herbs
salt, pepper, oil, vinegar to taste

Cut of the heads of the eggplant and bake in the oven.  Press out some of the juice.  Meanwhile, saute the garlic in some olive oil.  Mix the cooked garlic, walnuts, and herbs.  Cut the eggplant into strips.  On the inside side of the strips place the walnut mixture.  Top with salt, pepper.  Cover with oil and vinegar.
