ETHIOPIAN BEEF STEW

1 onion
1 lb beef
3 tsp berbere
3 tbls tomato paste
1 tsp salt
oil

Saute onions in oil.  Add the berbere and stir.  Add the beef and mix well.  Cook low for 3 minutes, stirring often.  Add tomato paste and 2-4 cups water.  Add salt and mix well.  Bring to a boil, then lower heat and simmer for 25 minutes.

With over 3 cups water there is a fair amount of liquid.
