FRIED CREAM

1 quart milk
1 cup flour
1/2 cup sugar
2 tsp cornstarch
1 demitasse Cointreau
8 egg yolks plus 1 or more whole eggs
1 tsp vanilla
1/4 lb sweet butter
pinch of salt
1 orange peel
bread crumbs

Boil the milk.  In a separate pan, melt butter, add flour and mix well.  Pour milk over it and whip with whisk until it has the consistency of hard cream.  Add sugar, dissolve cornstarch with cold milk and add to the mixture.  Keep cooking and whipping for 3 minutes.  Turn off heat.  Mix vanilla and eggs after whipping them together.  Add chopped orange peel and Cointreau.

Pour in pan and refrigerate to set.  When cold cut into squares, dip in beaten egg and roll in bread crumbs.  Fry in hot deep fat until brown and flambé in brandy when served.
