FRESH FRUIT AND RICOTTA CREAMCut fresh fruit (raspberries, strawberries, etc), add juice from 1 lemon and 1 tbls sugar. Meanwhile, to make ricotta cream: take 1/3 ricotta, add 2 tbls heavy cream, and mix. Meanwhile, take 1/3 cup heavy cream, 3 tbls powdered sugar, pinch cinammon. Whip until fluffy. Fold in the ricotta. Cover and refrigerate. Once the fruit has become juicy, put into cups, top with ricotta cream, and top with toasted shaved almonds. Can make couple hours in advance. |
