GREEN CHILE SAUCE

3 bags green chile (2 lbs)
1 white onion
several cloves garlic
1 tsp kosher salt
2 tsp oregano
2 tbls vegetable oil
3 tbls flour

Chop chile moderately fine. Combine with the onion, garlic, and oregano with 4 cups water and cook on low heat for 20-30 minutes. Partially puree the chile mixture. Meanwhile, make a roux with the oil and flour. When done combine with 1/2 of the chile mixture, stirring thoroughly. Combine the rest of the chile mixture and cook for another 15 minutes. Salt to taste.
