KHACHAPURI

Dough:

enough bisquick to make a soft dough
500 grams whole milk plain yogurt
1 tsp baking soda
1 Tbls vegetable oil

Filling:

500 grams mozzarella
500 grams feta
1-2 eggs

Alternative Filling (for Lobiani):

Kidney beans with some fat, salt and pepper

Mix the yogurt and oil. Add the bisquick and baking soda. Mix until you have a soft dough. Meanwhile mix the cheese and eggs. Roll out the dough thin. Place filling in the middle, and gather the ends of the dough together over the center (like making Khinkali). Tear off excess dough and gently roll out Khachapuri to flatten. Bake on a floured baking sheet in a medium oven, 300-350 degrees until lightly browned.

Makes four Khachapuri.
