LIMONCELLO

3 cups vodka (80 proof)
1 cup water
rind from 4 lemons
1 cup sugar

Soak the rind in the vodka, at room temperature, in a sealed container for 10 days. Strain the rind and place in a bowl.  Meanwhile, dissolve the water in the sugar and bring to a boil. Boil for 3 minutes.  When done pour over the rind. Discard the rind and let the syrup to cool.  When cooled add to the vodka.  Let stand for 5 days.  Store in the freezer.
