Sautéed potatoes and lardons

Take finger length or new potatoes, peel and keep whole or in long strips.  Cook for 10 minutes covered.  Add lardons (pancetta) and continue cooking.

Fried Potato Strips

Cut ends and sides off the potato to have a long box shape.  Cut into very thin strips, and then cut strips to have very thin strips of potato.  Sauté in oil.

Red Pepper Coulis

cut red pepper into quarters, cook in boiling water (not quite covered) for about 6 minutes.  Pureé through a food mill.  Place in a cup, add a teaspoon of butter, and emulsify with a hand mixer.

Cod with breadcrumbs in a red pepper coulis

Cook cod (3/4 inch thick) at 425 degrees for 6-8 minutes.  To make the breadcrumbs, take 2 slices of bread and process in the food processor until pieces are very small.  Sauté in butter until brown.  Place the coulis on the plate, place the cod in the coulis, and top with the breadcrumbs.

Paella

Partially precook meat and/or seafood.  Sauté onion and garlic with tomato, add broth and meat.  Add rice and cook until done.
