PASTA SALAD

1 lb rotelli
6 roma tomatoes
3 tbls capers
10 pitted olives
1/4 cup olive oil
red wine vinegar
1 tbls basil
1 tbls oregano
pepper

Cook pasta. Meanwhile, chop tomatoes and olives. Mix cooked pasta with vegetables, herbs, oil, and vinegar.

Variation: Pasta Salad with spinach and tomatoes

1 package gemelli or other pasta
1 bunch spinach
several tomatoes
feta
parmigiano
olive oil
salt, pepper

Cook the pasta and let cool. Chop tomatoes and spinach. Mix in cheese, olive oil, and spices. Work on quanitites.
