RICE ROBERTO

2 cans beef consommé
1 cup rice, uncooked
1 medium onion
1 small jar chopped pimentos, drained
1 medium jar sliced mushrooms, drained
1/2 stick butter

Dice the onion, then sauté in butter. Combine all ingredients into a 2-qt. pyrex dish and cover. Bake at 350 for about 70 minutes.

(Note: I tried just cooking all this in a large covered skillet, figuring the rice really only needs about 20 minutes to cook-- but it doesn't work nearly as well-- the rice doesn't cook as thoroughly nor evenly as it does in the oven.)
