ROASTED CAULIFLOWER

1 head cauliflower (about 2 lbs.) cut into small florets
2 garlic cloves, minced
1 tbs. minced peeled fresh ginger
½ tsp. coarse salt
1 tbsp. + 2 tsp. extra virgin olive oil
freshly ground pepper
2 tbsp. coarsely chopped fresh mint
1 tbsp. fresh lime juice

Preheat oven to 375.  Toss cauliflower, garlic, ginger salt and oil on a rimmed baking sheet; season w/ pepper. Roast cauliflower  until browned and tender, about 30 minutes.  Toss w/ mint & lime juice. Serves 4.
