SPINACH STUFFED PIZZA

Dough

3 cups flour
1 cup water
1 tbls olive oil
1 tbls butter
1/2 tsp salt
1 tsp yeast

     Filling and Topping

1 bunch spinach
12 oz mozzarella
40 oz canned whole tomatoes (1 lg & 1 sm can)
garlic
parmesian
basil
pepper

Make dough, let rise until doubled. Meanwhile, drain tomatoes thoroughly. Chop spinach and grate cheese; mix together. When tomatoes are drained, add minced garlic, pepper, and parmesian. Rollout 2/3 of dough for bottom layer. Add filling, cover with rest of dough. Top with tomatoes. Preheat oven to 425. Cover pizza lightly with foil. Cook for 35 minutes. Remove foil and cook another 15 minutes. Make sure top layer of dough gets cooked.
