CREPES

1 cup buckwheat flour
2 eggs
1 cup milk
2 tbls melted butter
1/4 tsp salt

Mix everything in a blender. Cover and refrigerate for at least 1 hour. Make sure the batter is fairly thin.

Options for filling:

potatoes, onions, topped with an egg
asparagus and bechamel sauce
spinach and bechamel sauce
mushrooms
